Spicy Grilled Shrimp with Pineapple Salsa
These spicy chipotle shrimp are full of flavor and cool down nicely with a bite of fresh pineapple salsa. If you don’t have your own grill, these shrimp are super easy to make in a cast iron grill pan, too.
Try this shrimp and pineapple salsa in tortillas or alongside rice for a complete meal!

- 1 lb raw shrimp, shells removed and patted dry
- 2-3 chipotle peppers in adobo, minced
- 1 tsp minced garlic
- ¼ red onion, finely diced
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 tbsp Field Day Organic Tomato Paste
- ½ lime, juiced
- ¼ cup water
- ⅛ tsp Tacoma Boys Ground Cumin
- ⅛ tsp Tacoma Boys Gourmet Paprika
- 2 tbsp Chosen Foods Avocado Oil, divided
- 1 cup pineapple chunks, finely diced
- ¼ red onion, finely diced
- 2 tbsp chopped fresh cilantro
- 1 small jalapeno, minced
- ½ lime, juiced
- Pinch salt
Directions
Prepare Ingredients
In a small bowl, mix together all ingredients for the pineapple salsa until well combined. In another small bowl, toss the shrimp with 1 tbsp avocado oil and ¼ tsp each salt and pepper until combined.Grill the Shrimp
Preheat the grill to medium high heat, about 450 degrees. Cook shrimp on the preheated grill for about 3-5 minutes per side or until cooked through. Remove shrimp from the heat and set aside.Make the Spicy Sauce
In a large saucepan over medium heat, warm the remaining 1 tbsp avocado oil. Add the onion and saute until just translucent, about 3 minutes. Add the minced garlic and continue to saute for 3-5 minutes, stirring occasionally. Add the chipotles in adobo, tomato paste, cumin, paprika, and remaining salt and pepper.Mix Shrimp with Sauce
Stir until combined and let simmer for 2-3 minutes, stirring occasionally. Stir in the water, a spoonful at a time, until well combined. Turn off the heat and stir in the lime juice and cooked shrimp, coating the shrimp with the sauce.Serve & Enjoy!
