  • ¼ cup butter
  • ¼ cup flour
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 cup lager or other dark beer
  • ¾ cup half and half
  • ½ cup mozzarella cheese, shredded 
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp Worcestershire sauce
  • 2 tsp spicy brown or stone ground mustard 
  • ¼ tsp salt, to taste

Directions

  • Make the roux.

    In a small saucepan, melt butter over medium heat. Whisk in flour and cook approximately one minute, whisking constantly.
  • Beer it up!

    Slowly whisk in beer and allow mixture to warm up a bit. Slowly add half and half, whisking constantly. Sir in the garlic powder and onion powder. Cook over medium heat, stirring often, until mixture has thickened, about 3-5 minutes.
  • Add the cheese.

    Turn the heat to low. Slowly add cheese, a handful at a time, until completely incorporated and melted, about 3-5 minutes.
  • Stir & serve!

    Stir in Worcestershire sauce, mustard, and salt. Serve warm with pretzels or sides of choice.
