Holiday Chex Mix

This holiday chex mix is sweet, salty, and crunchy! A blend of chex, popcorn, and pretzels are covered with white chocolate and festive sprinkles.

Enjoy this treat as a snack when hosting for the holidays!

  • 3 cups rice chex or corn chex
  • 2 cup cheerios
  • 1 cup pretzel sticks or mini twists
  • 1 cup popped Bob’s Red Mill Popcorn
  • 1 cup Enjoy Life Mini Semi-Sweet Chocolate Chips
  • 9 oz Lily’s White Chocolate Chips
  • 2 tsp coconut oil
  • Red & green sprinkles

Directions

  • Prepare Ingredients

    Line a large baking sheet with parchment paper. In a large bowl, add the rice chex, cheerios, pretzels, popcorn, and mini chocolate chips.
  • Melt the Chocolate

    In a separate small bowl, add the white chocolate chips and coconut oil. Melt in a double boiler or in the microwave in 30 second increments, stirring often, until just melted. Let cool slightly.
  • Mix the Chex Mix

    Pour the melted chocolate over the chex mixture in the large bowl, slowly, while tossing and stirring the mix to evenly coat in chocolate.
  • Let Chill

    Spread the mixture in a single even layer on the lined baking sheet. Scatter the red and green sprinkles over the top of the chex mix. Transfer to the fridge and chill for 15 minutes, or until hardened, then break the chex mix into chunks.
