GROUND TURKEY ENCHILADA STACK

For anyone watching their weight, an easy trick to healthy eating is to replace a beef enchilada with a turkey enchilada. Any recipe that calls for lean ground beef can be made the same way with ground turkey, which is naturally much leaner. Try alternating every other meal; turkey one night and beef the next.

  • 4 (8 inches) whole wheat tortillas
  • 1 lb lean ground turkey
  • 2 (8 oz) cans of Tacoma Boys tomato sauce
  • 1/2 tsp Tacoma Boys garlic powder
  • 3 tsp Tacoma Boys dried onion, minced
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 2/3 cup reduced-fat cheddar cheese, shredded

Directions

  • Cook The Turkey

    Cook turkey until all pink is gone.
  • Add The Flavor

    Stir in garlic powder, onion, tomato sauce, salt, and pepper.
  • Prepare the Pan

    Coat a round 2 1/2-quart dish, with cooking spray.
  • Layer it Up!

    Add one tortilla and 3/4 cup meat mixture. Top with 3 tsp cheese. Repeat the layers three more times.
  • Into the Microwave

    Cover and microwave for 4-5 minutes on high.
