Grilled Flank Steak with Dark Cherry Chipotle Sauce
Nothing screams spring/summer more than a great grilled flank steak recipe! Grilling season is an all time favorite, and this flank steak is taken up a notch with a homemade dark cherry chipotle sauce. Need we say more?!

- 2 lb flank steak
- Olive oil
- Salt and pepper
- Parsley, to garnish
- 1 cup frozen dark cherries
- 1 cup water
- 2 chipotle peppers in adobo sauce, minced
- 2 tbsp dark brown sugar
- Tiny pinch of salt and pepper
Directions
Prep The Steak
Remove the steak from the fridge for at least 30 minutes before cooking.Make the Sauce
Meanwhile, heat a medium saucepan over medium heat and add the cherries, water, chipotle peppers, and brown sugar. Let come to a simmer and reduce the heat to heat to low and let simmer for about 15 minutes until the cherries are broken down. Use an immersion blender to roughly blend the mixture until you reach a jam-like consistency. It’s okay if there are still some cherry pieces! If it seems too thick, add more water, 1 tbsp at a time and bring back to a simmer. Remove from the heat to cool.Cook the Steak
Preheat the grill to 425 degrees Fahrenheit. Rub the steak with a little bit of olive oil and a sprinkle of salt and pepper one each side. Cook the steak for 2 minutes per side until you reach desired doneness. For medium rare, it’ll take about 3-6 minutes per side depending on the thickness of the steak.Rest & Serve!
Remove from the grill and let rest for about 5-10 minutes before slicing. Slice the steak and serve with the chipotle cherry sauce on top, followed by fresh parsley and flaky sea salt if desired.
