Grilled Carrots With Maple Tahini Drizzle

Grilled carrots taste amazing already, but the simple maple tahini dressing and toppings of nuts and herbs make this side dish stand out. Tahini, or sesame seed paste, adds a savory taste and creamy texture while maple syrup sweetens things up.
All you have to do is chop a few ingredients and fire up the grill to make this simply delicious side dish. Don’t be afraid to get a good amount of char on those carrots on the grill! That’s where the natural flavors really come out.

- 4-5 Organic Grown Fresh Carrots
- 1 tsp avocado oil
- 2 tbsp parsley, chopped
- 2 tbsp pine nuts, roughly chopped
- 2 tbsp tahini
- 1 tbsp Coombs Family Farms Organic Maple Syrup
- 1 tbsp lemon juice
- Salt and pepper to taste
- Water to consistency
Directions
Preheat & prep.
Heat grill to medium heat, approximately 400ºF. Trim and scrub carrots. Slice lengthwise in half. Toss carrots with avocado oil, coating evenly.Grill & rest.
Place carrots on a hot grill and let cook for 5-7 minutes, until just charred. Flip and continue grilling carrots until cooked through and charred on both sides, about 3-5 minutes. Let the carrots rest for 3-5 minutes.Make the maple tahini.
Meanwhile, in a small bowl, whisk together ingredients for maple tahini drizzle, adding just enough water for preferred consistency.Garnish and serve!
Place carrots on a serving dish and top with maple tahini drizzle. Sprinkle with chopped pine nuts and fresh parsley and serve immediately.
