Goat Cheese Stuffed Sweet Mini Peppers

These stuffed little peppers are so easy to make as an appetizer or side dish for a potluck. Flavorful herbed goat cheese is stuffed into sweet peppers and then baked until tender and warm.
The cheese gets nicely browned in the oven and is perfect with a drizzle of hot honey to finish!

- 6 Sweet Mini Peppers
- 4 oz Montchevre Mediterranean Herbs & Garlic Goat Cheese
- Pinch Morton & Bassett Red Chili Flakes - optional
- Honey or hot honey, to drizzle

Preheat & Prep
Preheat the oven to 450 degrees Fahrenheit. Slice the peppers in half lengthwise and remove the seeds and membranes. -
Stuff the Peppers
Stuff the pepper halves generously with the herbed goat cheese and if desired, sprinkle with a pinch of red chili flakes. Place on a baking sheet. -
Bake the Peppers & Serve
Transfer the mini peppers to the oven and bake for 10-15 minutes or until golden brown on top and the peppers are just tender. Serve warm with a drizzle of honey.
