Garlic Parmesan Zucchini Coins
Parmesan zucchini coins are full of flavor and a breeze to prepare. It’s as simple as a drizzle of olive oil, a sprinkle of garlic salt, and a pinch of grated parmesan cheese.
A few minutes in the oven yields tender, cheesy bites of zucchini that go great as a side dish.

- 3 zucchinis, sliced ¼ inch thick
- 1 tsp Tacoma Boys Garlic Salt (or equal parts garlic powder and salt)
- 1-2 tbsp Bragg Organic Extra Virgin Olive Oil
- ⅓ cup Belgioioso Grated Parmesan Cheese

Preheat & Prep
Preheat the oven to 450 degrees Fahrenheit and place a wire cooling rack on a baking sheet.Season the Zucchini
Lay the zucchini slices on the rack-lined baking sheet. Brush each with a bit of olive oil, then sprinkle each slice with a pinch of garlic salt. Finish with a generous pinch of grated parmesan.Roast Zucchini
Transfer to the oven and roast for about 7-10 minutes or until zucchini is just tender and the parmesan is melted. Broil on high for 2-3 minutes, if desired for further browning.
