Dairy Free Penne Alla Vodka

  • ½ cup raw cashews
  • ½ cup warm water
  • 3 tbsp Bragg Organic Extra Virgin Olive Oil
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • ⅓ cup Napoleon Tomato Paste
  • ¼ cup vodka 
  • 1 lb Montebello Organic Penne Pasta (or gluten free pasta if desired)
  • Reserved pasta water
  • Salt and pepper to taste
  • Red pepper flakes, to garnish

Directions

  • Make the Cashew Cream

    Combine the cashews and warm water in a high speed blender. Blend on high for about 1-2 minutes until smooth. Add more water if needed to achieve a thick cream consistency. Set aside.
  • Cook the Pasta

    Cook the pasta according to package directions. Reserve one cup of the pasta water before straining the pasta.
  • Saute the Aromatics

    While the pasta is cooking, heat a large skillet over medium heat and add the olive oil. Add the shallot and garlic and cook for about 3 minutes, stirring often.
  • Stir in the Vodka

    Add the tomato paste and saute for another two minutes. Pour in the vodka and stir until evaporated.
  • Mix the Pasta with the Sauce

    Pour the cooked pasta into the pan with the sauce, along with ½ cup of cashew cream, ½ cup of the reserved pasta water, and a generous pinch of salt and pepper. Stir until combined, adding more pasta water as needed.
  • Taste and Serve

    Taste and adjust salt and pepper if desired.
