Dairy Free Penne Alla Vodka

- ½ cup raw cashews
- ½ cup warm water
- 3 tbsp Bragg Organic Extra Virgin Olive Oil
- 1 shallot, diced
- 2 cloves garlic, minced
- ⅓ cup Napoleon Tomato Paste
- ¼ cup vodka
- 1 lb Montebello Organic Penne Pasta (or gluten free pasta if desired)
- Reserved pasta water
- Salt and pepper to taste
- Red pepper flakes, to garnish
Directions
Make the Cashew Cream
Combine the cashews and warm water in a high speed blender. Blend on high for about 1-2 minutes until smooth. Add more water if needed to achieve a thick cream consistency. Set aside.Cook the Pasta
Cook the pasta according to package directions. Reserve one cup of the pasta water before straining the pasta.Saute the Aromatics
While the pasta is cooking, heat a large skillet over medium heat and add the olive oil. Add the shallot and garlic and cook for about 3 minutes, stirring often.Stir in the Vodka
Add the tomato paste and saute for another two minutes. Pour in the vodka and stir until evaporated.Mix the Pasta with the Sauce
Pour the cooked pasta into the pan with the sauce, along with ½ cup of cashew cream, ½ cup of the reserved pasta water, and a generous pinch of salt and pepper. Stir until combined, adding more pasta water as needed.Taste and Serve
Taste and adjust salt and pepper if desired.
