Charred Cowboy Caviar


Sweet corn, bell pepper, red onion, and black beans are the star of the show in this simple salsa appetizer! These simple ingredients balance out to a perfect blend of flavors and textures that the whole family will appreciate.

  • 1 cup corn kernels
  • ½ cup red onion, diced
  • ½ bell pepper, diced
  • 1-2 medium jalapeno peppers, minced
  • 1 cup Eden Organic Black Beans
  • ½ lime, juiced
  • Salt and pepper to taste
  • Tacoma Boys Gourmet Tortilla Chips, to serve


  • Char the corn.

    Heat a skillet over medium high heat. Add the corn kernels to the dry skillet and cook, stirring occasionally, until corn begins to brown and char.
  • Add the veggies.

    Turn the heat down to medium and add the red onion and bell pepper. Saute, stirring often, until onion and peppers are just tender, about 5-7 minutes.
  • Spruce it up.

    Add desired amount of minced jalapeno and black beans and stir, warming the mixture, for approximately 3 minutes. Season with salt and pepper and add the lime juice.
  • Dive in!

    Serve immediately with tortilla chips. Can also be served chilled.
