Charred Cowboy Caviar

- 1 cup corn kernels
- ½ cup red onion, diced
- ½ bell pepper, diced
- 1-2 medium jalapeno peppers, minced
- 1 cup Eden Organic Black Beans
- ½ lime, juiced
- Salt and pepper to taste
- Tacoma Boys Gourmet Tortilla Chips, to serve
Directions

Char the corn.
Heat a skillet over medium high heat. Add the corn kernels to the dry skillet and cook, stirring occasionally, until corn begins to brown and char. -
Add the veggies.
Turn the heat down to medium and add the red onion and bell pepper. Saute, stirring often, until onion and peppers are just tender, about 5-7 minutes. -
Spruce it up.
Add desired amount of minced jalapeno and black beans and stir, warming the mixture, for approximately 3 minutes. Season with salt and pepper and add the lime juice. -
Dive in!
Serve immediately with tortilla chips. Can also be served chilled.
