Herby Asparagus & Pea Salad

- ½ pound fresh asparagus spears, shaved
- 2 cups arugula
- 1 cup chopped snow peas
- 1 cup green peas, thawed if frozen
- ¼ cup President Feta Cheese, crumbled
- 2 tbsp each chopped chives, mint, dill, and parsley
- ¼ cup Colavita Extra Virgin Olive Oil
- 2 tbsp lemon juice
- 1 tbsp LR Rice Raw Honey
- 1 clove garlic, grated
- 1 tsp Annie's Naturals Organic Dijon Mustard
- Pinch salt and pepper

Make the Dressing
Make the dressing: In a bowl or jar with the lid on, whisk or shake all ingredients for the dressing until emulsified.Toss the Salad
To a large bowl, add the shaved asparagus, arugula, snow peas, and green peas. Drizzle with desired amount of dressing and toss to coat. In a small bowl, mix together the chopped herbs.Plate and Serve
Plate the asparagus and arugula mixture. Top with the feta cheese and the herb mixture and enjoy!
