Grilled Zucchini & Corn Salad with Goat Cheese

Salad 
  • 1 ½ tablespoon avocado oil, divided
  • 3 medium zucchinis, sliced lengthwise
  • ¼ tsp garlic powder
  • 4 corn cobs
  • 2 cups cherry tomatoes
  • 2 green onions, chopped
  • ½ cup goat cheese, crumbled 
  • 2 cups arugula
Dressing
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • ½ tsp dried oregano
  • Salt and pepper to taste

Directions

  • Preheat the grill.

    Preheat the grill on medium-high, approximately 450 degrees Fahrenheit.
  • Prep the veggies.

    Drizzle 1 tablespoon of avocado oil evenly over the zucchini and corn. Season the zucchini with the garlic powder, salt, and pepper. Season the corn with salt and pepper. On a grill pan, toss the tomatoes with ½ tablespoon of avocado oil. Season with salt and pepper.
  • Get to grilling.

    Place corn cobs and grill pan with tomatoes on the hot grill. Cook tomatoes, stirring occasionally, until charred, about 3-5 minutes. Grill the corn cobs, rotating sides every 3-5 minutes, until each side is golden and slightly charred, approximately 10-15 minutes. When tomatoes are done, grill zucchini for 2-3 minutes on each side, until just tender and grill marks are present.
  • Let cool & make the dressing.

    Allow corn, tomatoes, and zucchini to cool to room temperature on a plate, 10-15 minutes. Meanwhile, in a small bowl, whisk together the 3 tablespoons of olive oil, juiced lemon, dried oregano, salt, and pepper.
  • Toss & serve!

    In a large bowl, add arugula, goat cheese, chopped green onion, zucchini, tomatoes, and corn. Toss with dressing and serve immediately.
