Goat Cheese Stuffed Sweet Mini Peppers
These stuffed little peppers are so easy to make as an appetizer or side dish for a potluck. Flavorful herbed goat cheese is stuffed into sweet peppers and then baked until tender and warm.
The cheese gets nicely browned in the oven and is perfect with a drizzle of hot honey to finish!

- 6 Sweet Mini Peppers
- 4 oz Montchevre Mediterranean Herbs & Garlic Goat Cheese
- Pinch Morton & Bassett Red Chili Flakes - optional
- Honey or hot honey, to drizzle
Directions
Preheat & Prep
Preheat the oven to 450 degrees Fahrenheit. Slice the peppers in half lengthwise and remove the seeds and membranes.Stuff the Peppers
Stuff the pepper halves generously with the herbed goat cheese and if desired, sprinkle with a pinch of red chili flakes. Place on a baking sheet.Bake the Peppers & Serve
Transfer the mini peppers to the oven and bake for 10-15 minutes or until golden brown on top and the peppers are just tender. Serve warm with a drizzle of honey.
