- 1 cup corn kernels
- ½ cup red onion, diced
- ½ bell pepper, diced
- 1-2 medium jalapeno peppers, minced
- 1 cup Eden Organic Black Beans
- ½ lime, juiced
- Salt and pepper to taste

Directions
Char the corn.
Heat a skillet over medium high heat. Add the corn kernels to the dry skillet and cook, stirring occasionally, until corn begins to brown and char.Add the veggies.
Turn the heat down to medium and add the red onion and bell pepper. Saute, stirring often, until onion and peppers are just tender, about 5-7 minutes.Spruce it up.
Add desired amount of minced jalapeno and black beans and stir, warming the mixture, for approximately 3 minutes. Season with salt and pepper and add the lime juice.Dive in!
Serve immediately with tortilla chips. Can also be served chilled.
