GROUND TURKEY ENCHILADA STACK
For anyone watching their weight, an easy trick to healthy eating is to replace a beef enchilada with a turkey enchilada. Any recipe that calls for lean ground beef can be made the same way with ground turkey, which is naturally much leaner. Try alternating every other meal; turkey one night and beef the next.

- 4 (8 inches) whole wheat tortillas
- 1 lb lean ground turkey
- 2 (8 oz) cans of Tacoma Boys tomato sauce
- 1/2 tsp Tacoma Boys garlic powder
- 3 tsp Tacoma Boys dried onion, minced
- 1/2 tsp pepper
- 1/4 tsp salt
- 2/3 cup reduced-fat cheddar cheese, shredded
Directions
Cook The Turkey
Cook turkey until all pink is gone.Add The Flavor
Stir in garlic powder, onion, tomato sauce, salt, and pepper.Prepare the Pan
Coat a round 2 1/2-quart dish, with cooking spray.Layer it Up!
Add one tortilla and 3/4 cup meat mixture. Top with 3 tsp cheese. Repeat the layers three more times.Into the Microwave
Cover and microwave for 4-5 minutes on high.
