Mini Layered Mousse Cakes
Layer cooked cake with quick and easy dairy free mousse for cute little individual desserts that are easy to make. Tacoma Boys has a variety of cake mixes, including gluten free and vegan, to choose from.
Ingredients
- European Gourmet Bakery Organic Vanilla Cake Mix, prepared according to package instructions
- 1, 15 oz can Thai Kitchen Coconut Cream, chilled
- 3 tbsp Woodstock Farms Organic Powdered Sugar
- 3 tbsp cocoa powder
- Raspberries
Directions
- Bake the cake and let cool to room temperature. Cut circles the size of your serving glass from the cake.
- Ensure the coconut cream is fully chilled. Scoop the top, creamy part of the coconut cream from the can and add to a bowl. Use a hand mixer to beat the cream until whipped, about 3 minutes.
- Add the remaining ingredients and whip again until well combined and there is a mousse-like consistency.
- Place a circle of cake in the bottom of a serving glass. Top with some of the mousse. Follow with another layer of cake, then another layer of mousse. Top with raspberries and enjoy!
