Who doesn’t love a good baked potato?! Take a spin on the classic loaded baked potato with these taco style potatoes. Any toppings would be delicious, such as taco meat, sour cream, green onion, and jalapenos.

- 2-3 large russet potatoes, washed and scrubbed
- ½ lb ground beef
- 1 tbsp Simply Organic Spicy Taco Seasoning Mix
- Smith Brothers Farms Sour Cream
- Tillamook Shredded Mexican Cheese Blend
- Mrs Renfro's Sliced Jalapeno Peppers
- Chopped green onions
- Chopped roma tomatoes
- Or other desired toppings
Directions
Cook the Potatoes
Preheat oven to 450 degrees. Use a fork or knife to carefully poke several holes all over the potatoes. Place the potatoes in the oven and let cook for 35-45 minutes, depending on the size of the potatoes.Let the Potatoes Cool
Remove the potatoes from the oven and let cool for 5-10 minutes.Cook the Taco Meat
Meanwhile, heat a medium skillet over medium heat. Add the ground beef and taco seasoning. Cook, stirring and breaking up the beef, until cooked through, about 7-10 minutes.Assemble the Loaded Potato
Split the potatoes in half and sprinkle with a pinch of salt and pepper. Top with desired taco toppings, such as a dollop of sour cream, taco meat, chopped green onions and tomatoes, pickled jalapenos, and shredded cheese.
