Caprese Chicken Skewers
Just in time for grilling season, these caprese chicken skewers are quick to make and full of fresh flavor! Alongside local seasonal produce of ripe cherry tomatoes and fresh basil, simply grilled chicken is seasoned with classic pesto sauce.
Then, a drizzle of balsamic glaze (balsamic vinegar reduced with sugar) brings it all together as a finishing touch.

- Oil, to grill
- 1 lb chicken breast, diced
- Pinch salt and pepper
- ¼ cup Rao’s Homemade Basil Pesto
- 8 oz BelGioioso Mozzarella Pearls
- 1 dry pint cherry tomatoes
- Fresh basil leaves
- Nonna Pias Balsamic Glaze, to serve

Preheat the Grill
Oil the grill or grill pan and heat it to medium high heat.Grill the Chicken
When the grill or grill pan is hot, place the diced chicken on the grill and season lightly with a pinch of salt and pepper. Cook the chicken for about 4 minutes, then flip and cook for another 4 minutes or until the chicken is cooked throughToss Chicken with Pesto
Remove the chicken from the heat and let it rest for 5 minutes. Then, toss the chicken with the basil pesto until well coated.Assemble the Skewers
Using metal or wooden skewers, thread the chicken pieces, mozzarella pearls, cherry tomatoes, and basil leaves, alternating each ingredient. Serve warm with a drizzle of balsamic glaze to finish.
