Grilled Caprese Chicken

- 2 boneless chicken breasts
- 2 tbsp avocado oil
- Salt and pepper to taste
- 4 slices BelGioioso Fresh Mozzarella Sliced
- 4 slices heirloom tomatoes
- 4-8 fresh basil leaves
- ⅓ cup Delallo Balsamic Glaze, or to taste

Prep the Grill
Grease the grill’s cooking grate and preheat the grill to medium-high heat.Prep the Chicken
Meanwhile, slice the chicken breasts lengthwise and pound out any uneven thickness. Pat the chicken breasts dry and drizzle all sides with avocado oil. Season with salt and black pepper to taste.Cook the Chicken
Place the four chicken breasts on the hot gril and grill breasts for 3-6 minutes per side, depending on the thickness of the chicken.Add the cheese and tomato
After grilling the first side of the chicken breasts and flipping, place one slice of mozzarella cheese on each piece of chicken. Place one slice of heirloom tomato on top of each slice of mozzarella and close the grill lid. Allow the chicken to finish cooking while the cheese melts and the tomato heats up.Garnish and serve
Remove chicken from the grill and let rest for 5 minutes. Transfer to a serving platter and top each piece of chicken with 1-2 basil leaves. Drizzle with the desired amount of balsamic glaze and serve hot.
