Garlic Parmesan Zucchini Coins

Parmesan zucchini coins are full of flavor and a breeze to prepare. It’s as simple as a drizzle of olive oil, a sprinkle of garlic salt, and a pinch of grated parmesan cheese. A few minutes in the oven yields tender, cheesy bites of zucchini that go great as a side dish.

Ingredients

Ingredients List:
  • 3 zucchinis, sliced ¼ inch thick
  • 1 tsp Tacoma Boys Garlic Salt (or equal parts garlic powder and salt)
  • 1-2 tbsp Bragg Organic Extra Virgin Olive Oil
  • ⅓ cup Belgioioso Grated Parmesan Cheese

Preparation

  1. Preheat & Prep Preheat the oven to 450°F. Place a wire cooling rack on top of a baking sheet to allow for even air circulation during roasting.
  2. Season the Zucchini Arrange the zucchini slices in a single layer on the wire rack. Lightly brush each slice with olive oil. Sprinkle each slice with a pinch of garlic salt, followed by a generous amount of grated parmesan cheese.
  3. Roast Zucchini Transfer the baking sheet to the preheated oven and roast for 7–10 minutes, or until the zucchini is just tender and the parmesan has melted. For additional browning and crispness on the cheese, switch the oven to high broil and broil for 2–3 minutes, watching closely to prevent burning.
